Seared Black Bass with Spinach Berry Salad, & a Lemon Muscadet Gastrique
For the Bass: 1 Black Bass, cleaned and scaled Flour, as needed Salt and Pepper, to taste
Method: Preheat oven to 350 degrees. Cut three slits in the skin of the bass, preferably in the direction it swims. Season it well and all sides and in the cavity. Dredge lightly in flour, and sear in a hot pan on both sides till golden brown. Finish in the oven till meat is slightly underdone, and super juicy, the carry over cooking will finish cooking it when you remove it from the oven. |

Mary, how much does a fish like that cost?
This fish was about 10.99 a pound. It cost about that much, it was like 10.50.
