I know that the big game day is just a day away. I'm sure that most of you have already planned out your snacks, but just in case, I have some special treats to share with you! I thought I would revisit some of my older posts, that are just perfect for Super Bowl Sunday!
In addition to these yummy blasts from the past I have my work creation from today! The theme today at work for our store wide sampling was naturally, Half Time Favorites, so at first I was torn as to what to make. I did eventually settle on chili, not just any chili, but a hearty chili, with fresh fire roasted vegetables, and grilled chuck. I am not typically a chili kinda girl, I just don't like the way most people make it. So I set out to make it the way that I would want it, hearty with lots of veggies, and nice big pieces of steak, and a lingering smokiness. I had the best time grilling the veggies, and the steak. Obviously I'm a butcher and I love meat so it's really a treat for me when I get to cook some for our customers! Here are a couple of pictures from the demo today.

Beer Braised Chili Makes enough chili for 8-10 people 2 - 28 oz Cans Diced Tomatoes, Liquid and all 3 - 14 oz Cans Black Beans, drained of liquid 3 Bell Peppers, multi color 2 Yellow Onions, sliced to grill 3 Tomatoes, sliced to grill 6 Cloves of garlic, roasted in the oven 2 Lb, Fresh Chuck roast sliced into thin steaks for grilling 1 Bottle Belgian Ale 3 Tblspn Chipotle Powder 2 Tblspn Cumin 2 Tblspn Paprika 2 Tblspn Chili Powder Season with Salt and Pepper, as needed
Method: 1. Coat the veggies and steak in EVOO, and season liberally with salt and pepper. Grill on a hot grill, or roast in a 400 degree oven. If you roast, than sear the steak on a hot pan. 2. Cut all veggies and steak down to bite size pieces and put in a hot skillet. Add in your canned tomatoes, black beans, and ale. Add your spices, and simmer for about an hour. Season to taste and serve with some cornbread, or your favorite tortilla chips.
