Korean Style Meatball Sandwiches

     I have never been one for meatball sandwiches, but the meatballs have been calling out to me lately. So when the ground beef went on sale at work I knew it was my chance to create the perfect meatball.....Korean Style! These meatballs have been seasoned the same way that you would season and marinade Bulgogi, Korean Barbeque. They are a little sweet, a little salty, and they pack a mean garlic and ginger punch! I also cooked up some mushrooms, with similar seasonings and tossed in some fresh scallions. I love the flavor profile of Korean food. It is made up of only a handful of ingredients and yet the flavor is so complex. It's comforting to me, a very homey taste.
     Korean food reminds me of the days when Tom and I were dating. The first time I ever met Tom's mother she sat me down at her kitchen table and fed me kimchi, fresh kimchi pancakes, and kimbap, Korean style sushi. I knew from that moment on that I would forever be apart of the Poehnelt family. In fact we are getting ready to celebrate our three-year wedding anniversary this week!
Time has just flown by!
     Back to the sandwich, the roll came from my work it was just a simple white roll. I added some of Tom's mother's fresh Kimchi, and the sautéed mushrooms to it. The meatballs were juicy and very flavorful. All in all the sandwich was a hit, and Tom loved it. I guess meatballs are back in for me, with a recipe like this I think I will tackle them again soon!

Yes, I have a favorite! I'm a hippie freak who eats health food, so they're made with pecans and Colby, eggs and whole wheat saltines. And some sage, etc --no meat. But they taste really good. To me, at least. Probably not to Tom.

I don't have a favorite meatball, I pretty much like them all :). I want to try these. I love ginger and garlic and mushrooms and all the other goodies you put in there!
