Christmas is fast coming, so fast I have had hardly anytime to cook and post! I have had time to think over what I want to cook, and plenty of time to switch it up, so I guess, needless to say, I am still trying to figure it out!!! Well this dish is one that I made a while ago. I love risotto and I was trying to create a dish to share with a local restaurant for a job interview. It turned out amazing and I definitely got the job. This risotto is creamy, buttery, and oh so rich with that earthy goat cheese. It is a dish that I thoroughly enjoyed, and would love to have it on my Christmas menu.
My wonderful, creative husband has cooked up a few great ideas for our Christmas menu. He would love to have savory gingerbread pierogi with a sweet potato filling. Doesn't that sound delicious? So I will definitely keep you in the loop as to our menu, but for now look out for my next post: Bibimbap!!!!
